Apple Juice - Perry Russet

Seeling apple from Iola Wisconson. For cider - Medium body. High acidity dominates the flavor, like “biting into a lemon” though there is nothing particularly citric about it. Long, tart, dry finish. No noticeable bitterness but some astringency.
