Dimethyl sulfide (DMS)

Off-flavour. Sulfur: dimethyl sulfide or DMS. Flavour/aroma of Corn. Usually caused by using very pale malts (like pilsner malt) that contain high levels of SMM (the precursor of DMS), cooling the boil too slowly combined with too slow fermentation. Can also be caused by bacteria, but then you usually get different flavours such as cabbage, celery, or even shrimp.
